What a crazy week we have had. I am very glad to say Halloween has come and passed. The kids had a great time with there costumes and me and the husband enjoyed getting the kids out walking around. We are now putting focus on getting the kids prepared for their new baby brother who should be here late December. We will need to move some things around the home to change up rooms for our new addition. Also since it is cooler the hubby, kids, and I have been playing with so many new fall recipes using a variety of squashes. It may sound odd but we have had squash in almost every meal for the past week and the kids are in heaven. I made some stuffed squash that turned out amazing I must share.
Stuffed Acorn Squash
3 Medium whole acorn squash sliced in half. Remove the seeds
Sprinkle with salt, pepper, and coconut oil or olive oil
Cook up 1 and half pounds of no nitrate/ no nitrite sausage of your choice- I used an apple sausage
Along with the sausage I sauté onion and bell peppers.
Once the meat is finished I stuff the squash and then bake at 375 for 45-60 minutes or until the squash is tender.
